I stumbled upon sorrel at a nursery sale. I didn’t know what it was which isn’t saying much because I am new to gardening and appreciating the beauty and nutritional generosity of plants. I was drawn to its beauty and had no idea that it was a plant with origins that are centuries old. I had to be told its name. Sorrel. I was told and that it also is called spinach dock. It has medicinal properties that include fighting infections and contains vitamin C A, B6, iron, magnesium, manganese, phosphorous and more.
When i cooked it in a pan with other vegetables, it seemed nondescript. I watched it in the garden taking care to water it. I did notice that it seemed to die when the temperatures rose. When I wasn’t looking, it grew back. I looked at the new growths with amazement, and thought if a plant can come back from humidity and soaring temperatures, humans can just possibly return from challenges and setbacks
